I love food.

One of my all-time Filipino comfort food is Ginataang Halo Halo.

At 5, I was tasked to go to the market with my mom, grate and press fresh coconut cream or gata. I remember how fun it was to make dozens of bilo-bilo – drop them to a pot of boiling coconut milk while our cook prepared the sago, ube, saba and langka. I think it was also at this age that I learned how to cook my first Pork Sinigang and discovered the joy of eating okra and bagoong padas with bare hands.

At 30, I gave up my career in advertising to pursue my dream to become a chef. I enrolled in culinary school and weeks before the completion of my internship, I discovered that I was 3-weeks pregnant with our second child.

The next chapter of my life was dedicated to raising our children and helping in our family business.

My advocacy in Pinoy Organics was birthed because of my weekly quest to find organic products and farm-fresh produce for our family. My involvement in the movement has brought me to farms in many cities and provinces during weekends. I learned first-hand how the vegetables I cook and eat are grown. I also had the privilege to meet and work with the pioneers in organic agriculture in the Philippines because of it.

In 2013, at the height of my fast-paced lifestyle as a brand and communications consultant and consultant for various organizations, by accident, my doctors discovered 2 kidney stones, a cyst in my ovary, and a cyst on my left and right kidneys.

In the course of monitoring it, they also told me that I have a rare disease called Medullary Sponge Kidney (MSK). The immediate suggestion by two medical doctors was to remove the cysts and stones via surgery.

I asked them, “Is it necessary to have the procedure now?” 

Both answered, “No, but it would be best to do it as soon as possible.”

I thanked both of them and prayed about it.

 

 

Instead of having the surgery, I decided to take the alternative way of healing my body – through food, nutrition and lifestyle modifications.

Along the way, I met wonderful and caring doctors, healers and teachers who eventually became my friends.

As of my last monitoring lab results last February 2020, the cyst in my ovary is gone, there’s only one stone left in my kidney, and the size of the cysts on both kidneys remain unchanged.

My seasonal eczema, rashes and itchies on various parts of my body were healed, too.

Here’s one thing I’d like you to hear from me. In my seven-year journey of faith, I learned that healing cannot be confined or focused on the physical or body alone.

Equally important are our heart, feelings and soul.

We all need a home, a refuge.

We all need to be accepted and belong.

We all need at least one friend who will love us for who we are and who’ll celebrate life with us, or cry with us in times of grief.

Even if we eat organic vegetables, sleep 8-10 hours a day and exercise daily, but if we are lonely, chronically stressed out, have conflicts at work or at home, it would be difficult to experience physical healing or optimum health.

This year, I created Nourish Life – an inspired space where we can have meaningful conversations about food, wellbeing and what truly nourishes us.

Remember my mung bean sprouts last week? I sproute Remember my mung bean sprouts last week? I sprouted 1.5 cups because I keep forgetting ang dami pala nun when soaked and sprouted! So I cooked only a third of it for lunch today.

With added carrots, brocolli, cauli, squash and alugbati, leftover local white corn plus curry spices from scratch, glad to have eaten with the fam a simple, affordable and nutrient dense meal today.  Served it with freshly popped papadams.

We rarely deep-fry but for lunch today, we did because we wanted to find out if teens would even notice it's not real chicken 😉

Guess what? The 11-spices worked!

We're currently designing a nutrition program for children and teens and this will probably make it to our suggested recipes. Finding ways to make it gluten free.

WHERE'S THE TOFU? I'll be doing another 21-day el WHERE'S THE TOFU?

I'll be doing another 21-day elimination diet soon and today, I'm challenging myself if I'd react to my food intolerance sa tofu, seeds beans.

Why challenge myself? 

By challenging my intolerances, I'm.able to identify my true food allergies vs intolerances. I'm learning to be more mindful by listening to how my body reacts to food, stressors, etc. It's another way of healing one's self.

My health goal is not weightloss but to achieve optimum health and one of the fundamentals I've learned in functional medicine is the importance of diversifying our diet - kulay your plate!

At 12:30  noon, I realized I should cook something quick (remember, lahat kami WFH). I checked our ref and pulled out whatever's there. Sauted local onions, ginger, garlic, fermented beans, mushrooms, bell peppers, french beans and sesame seeds with coldpressed EVCO. Served it with biodynamically-grown red rice.

So hungry, our silken tofu is still cooking.

Quick steamed/ stir fried with a little EVCO and water left-over biodynamic brown rice with whatever organic vegetables left in our ref (white onions, yellow capsicum, cherry tomatoes, kale) and fresh shitake mushrooms.

Diversity is key to a nutrient-dense meal.
